Pastry Sous Chef

Position Profile

The Edmonton Convention Center is looking for a Pastry Sous Chef to join the team! Under the direction of the Executive Pastry Chef, supervises, organizes, controls, evaluates and coordinates the activities of Senior Chef de Partie, Chef de Partie, Demi-chef de Partie, Pastry Commis and kitchen helper and is also responsible for assist executive pastry chef for the production planning, ordering, preparation, and presentation of food in is Pastry department. Using Ungerboeck system checking daily functions.

Job Details

The successful candidate will be responsible for:

• Assigning tasks and utilizing employee capabilities.
• Leading the pastry team in executive pastry chef’s absence
• Providing positive guidance to kitchen staff members and a positive work environment.
• Managing food quality and productivity by keeping detailed records and minimizes waste and time restriction.
• Ensuring that the mise en place is ready for the next day according to expectations and demands
• Assisting other employees when required with right direction and expectation from executive chef direction and needs.
• Ensuring that all food event orders are prepared in accordance to time/date/guarantee and to the highest quality in absence of Executive Pastry Chef
• Helping Executive Pastry Chef to create and build Menu for special events

The successful candidate will have:

• Interprovincial Journeyman Cook Certificate or equivalent
• Basic knowledge of working in a commercial kitchen
• 2 years minimum of supervision and 7 years of cooking experience
• Basic computer knowledge and typing skills
• Good communication skills, written and verbal
• Excellent culinary knowledge and willing to keep his knowledge up to date by being fully aware of culinary trends and practices
• A flexible work schedules
• Knowledge of health and safety, and food safety
• Basic knowledge of First Aid
• Understands MSDS (Material Safety Data Sheet
